Kiki's Spicy Sweet Potato Soup

A sweet and savory soup with a slightly thick consistency and a nice, mild yet spicy afterburn.

Components

  • Spicy Sweet Potato Relish

Ingredients

  • 4 whole sweet potatoes, peeled and roughly chopped

  • 3-4 yams, peeled and roughly chopped

  • 2 red onions, roughly chopped

  • 4-5 garlic cloves, smashed

  • 1 tsp cayenne pepper

  • ½ cup sugar (may use brown sugar or honey instead)

  • Salt

  • Chicken stock (enough to cover vegetables)

  • 3 cans coconut milk

Directions

  • In a large soup pot, combine sweet potatoes, yams, red onion, garlic, and cayenne pepper. Add chicken stock, enough to cover the vegetables.

  • Bring to a boil and cook until the vegetables are soft. (Prepare relish while vegetables are cooking, see below)

  • Blend with an immersion blender (or remove from pot and blend in traditional blender) until smooth.

  • Add coconut milk, sugar (or brown sugar or honey), and salt to taste. Mix well.

  • Serve warm with a spoonful of the relish.

Ingredients

  • 1-2 sweet potatoes, diced

  • 2 cloves garlic, minced

  • Crushed red pepper flakes, to taste

  • Salt, to taste

  • Pepper, to taste

  • 1 tbsp parsley, finely chopped

  • Oil

Directions

  • In a small skillet, combine sweet potatoes, minced garlic, oil, and pepper flakes, salt, and pepper to taste.

  • When the sweet potatoes are slightly crispy and colored, toss with chopped parsley.

  • Set aside; Add a spoonful to each bowl of Kiki’s Spicy Sweet Potato Soup.
