Kiki's Spicy Sweet Potato Soup
A sweet and savory soup with a slightly thick consistency and a nice, mild yet spicy afterburn.
Components
Spicy Sweet Potato Relish
Ingredients
4 whole sweet potatoes, peeled and roughly chopped
3-4 yams, peeled and roughly chopped
2 red onions, roughly chopped
4-5 garlic cloves, smashed
1 tsp cayenne pepper
½ cup sugar (may use brown sugar or honey instead)
Salt
Chicken stock (enough to cover vegetables)
3 cans coconut milk
Directions
In a large soup pot, combine sweet potatoes, yams, red onion, garlic, and cayenne pepper. Add chicken stock, enough to cover the vegetables.
Bring to a boil and cook until the vegetables are soft. (Prepare relish while vegetables are cooking, see below)
Blend with an immersion blender (or remove from pot and blend in traditional blender) until smooth.
Add coconut milk, sugar (or brown sugar or honey), and salt to taste. Mix well.
Serve warm with a spoonful of the relish.
Spicy Sweet Potato Relish
Ingredients
1-2 sweet potatoes, diced
2 cloves garlic, minced
Crushed red pepper flakes, to taste
Salt, to taste
Pepper, to taste
1 tbsp parsley, finely chopped
Oil
Directions
In a small skillet, combine sweet potatoes, minced garlic, oil, and pepper flakes, salt, and pepper to taste.
When the sweet potatoes are slightly crispy and colored, toss with chopped parsley.
Set aside; Add a spoonful to each bowl of Kiki’s Spicy Sweet Potato Soup.
